What's for Dinner, Tues., April 20, 2021

Posting early due to working late.


Cilantro pesto chicken breast, grilled. I'm making the pesto with cilantro from the garden.

Cucumber salad with sour cream and red onion.

Massaged kale salad with fresh baby kale (also from garden). Goat cheese, cranberries, and wasabi almonds, chopped. Dressing is honey mustard vinaigrette.

Dessert: Ice cream cone, caramel swirl with walnuts.

Two half pound patties topped with pulled pork and a fried egg, served with house made pickled jalapeños (and a house made pickle) and shoestring fries.

Long Island iced tea.

simple salad on the side (iceberg, broccoli, red bell pepper, carrots, celery, onion) with a choice of bottled dressings.

6. A new recipe for chicken and rice.

Brown rice, chicken stock, white onion, flour, chicken thighs.

I was tempted to throw in a 1/4 cup of white wine but decided to strictly stay with the recipe directions and ingredients.

Sort of like a dump cake. You stir together everything but the thighs and put it in a 9 x 13 pan and put the chicken on top and just bake.

I'm sure it's going to be tasty, but my thoughts are whether there will be enough space in the frig to put the leftovers.

Turned out quite good. I think letting the dough rise another half hour or so before I actually bake it is the secret.

It was pay day and I was feeling lazy so called in an order to pick up.
Just finished off the fries as a midnight snack.

Dinner was a burger with lettuce, mayo, and extra mushrooms. Their mushrooms are so tasty, I always get an extra cup on the side. Had a nice fountain Coke, too. I rarely drink soda, but it is required with some meals.

It was a very satisfying meal- especially since there were no dishes to wash.
