Grilled chicken salad.
I took one of my cilantro pesto grilled chicken breasts out of the frig an hour ago and I intend to chop it up and have it as the main part of a salad. Of course there will be accompanying vegetables in the salad. I chose mild ones so as not to compete with cilantro's strong flavor. Yellow squash and cucumber. I addition, I think I have fresh corn already cooked, so if I do, I'll put that in, too.
The greens I'm using are ruffly green, a little baby arugula, and romaine.
On the side, I'll have club crackers with garlic parmesan spread. Freshly ground pepper on top, and also chopped scallions.
Pineapple passionfruit kombucha to go with it.
I'd love to have dessert but outta' time so I guess I'll skip it and just have a cup of Earl Gey.
Pulled pork with BBQ sauce on potato buns - pork loin was marinated overnight and slow baked all day
Red potato wedges oven fried with salt, pepper, and lots of garlic powder
Corn on the cob from frozen.
A generous plate went to our neighbor
FLFC smelled the pork cooking and discussed it with us. Repeatedly. In order to shut him up I cut him off a piece an hour or so before I considered it done. He ate a lot.

(22,065 posts)The Landlady(!) got an itch to make fresh pasta so she's sifting flour, cracking eggs and getting the other ingredients in order. I think she's planning on making pappardelle since it's a wider pasta and easier to cut by hand.
The brown sauce is going to have sliced portobello mushroom, onion, garlic and marsala wine.
Meanwhile, boneless pieces of chicken breast meat will be floured and sautéed then served on top of the pasta.
Big green salad on the side with lots of chopped vegetables scattered atop the greens.
Orange slices for desert.

He had a fondness for junk foods, such as popcorn, beef jerky, and Butterfingers. But his favorite snack was pork rinds with Tabasco sauce.
That's senior. Now jr was no better. I recall he liked peanut butter and jelly sandwiches for lunch. Yes, he had a WH chef of renown and he would order a PBJ for lunch.
If I had a WH chef, I would be ordering shrimp bisque for lunch.

(68,768 posts)somewhat unconventional Shepherd's pie. It was good. The dogs enjoyed it too...I cook for them. Tomorrow the dogs and I will have pulled pork. I have three dogs Molly, Sophie, and Lili...sadly I lost Benjy a couple of months ago.

Made lots of extra and took next door to a couple where the one who cooks is recovering from a knee replacement. Ouch. Shes a vegetarian trying to increase her hemoglobin. Black beans and citrus are a good combo for that Ive read. Plussoup is always good on a wet and snowy day. Not kidding. Its Minnesota.
