What's for Dinner, Sat., May 1, 2021

Cream of mushroom soup. It has a few cups of onion, vegetable stock, sherry, thyme. Oh and six tablespoons of butter.

I'm thinking to drizzle some truffle oil over the top.

Side of baby arugula with lemon and olive oil. Toasted pine nuts.

Crusty bread, heated in the oven.

To drink, blueberry kombucha.

I'm putting a few sun-dried tomatoes in the sauce, along with lean browned ground beef, hot Italian sausage and spicy sicilian meatballs. Topped with seared scallops and fresh basil.

Only it's tofu shirataki, which has zero carbs, but is barely "pasta." You have to have a very good imagination for it to work!
The sauce is Boursin cheese, melted and thinned with cream. Easy and surprisingly good.
