What's for Dinner, Thurs., May 6, 2021

Working late tonight, so I'm having items that just need to be warmed up.

--mushroom soup. To make it a little different, I'm adding wild rice.

--cabbage roll with mashed potato.

Cherry kombucha.

Dessert: lemon cake with vanilla pudding and fresh strawberries. Ginger tea.

For dessert I made mini peanut butter cup cheesecakes from my Betty Crocker cookbook. (I haven't given up on it yet.)

10. we have scalloped potatoes a lot

They're cheap. And often when we get a food box (distributed locally as part of pandemic relief) there's a bag of potatoes and a bag of onions in it.

Also, we usually get a ham in our monthly grocery shop. We cut it up and portion it into freezer bags and use it all month long. So ham is most often what goes into the scalloped potatoes, but fresh kielbasa is GREAT and we use that when we can get it on sale.

The little cheesecakes were tasty. They didn't look really pretty, but Al and I liked them. And they were really easy--using vanilla wafers as the "crust."

A couple of weeks ago, the Landlady(!) made Beouf Bourguignon but she made far too much gravy so she froze the extra. Today, she added more meat and vegetables and whipped the dinner together in a lazy 45 minutes.

We paired it with a green salad.

potato salad and broccoli & cauliflower slaw.

For dessert: Blondies made by my mother. Stopped by her house on the way home from work to drop off her Mother’s Day flowers and card. She’s still on her pandemic baking kick and I was glad to take another bag of baked goods off her hands.
