What's for Dinner, Sat., May 8, 2021

Beef Bulgogi Lettuce Wraps. The mix has onion, miso paste, garlic, ginger, sesame oil, diced apple and brown sugar.

Toppings are shredded carrot and cabbage, peanuts, kimchi, and some of my leek microgreens.

Blueberry basil kombucha to drink.

Snow crab legs, baby potatoes, smoked sausage, corn on the cob, clarified butter.

We do a crab boil once or twice a year. My wife went to the grocery earlier and she said she'd buy some crab legs if they look good and the price is reasonable.

It'll be steak, baked potato, and a nice salad otherwise.

I'm thinking sausage, mushroom and onions on top (and extra cheese for Al).

There are some mini peanut butter cups if we want dessert

Got some mushrooms at the market today (although I may save them for a mushroom ravioli tomorrow), and we have leftover pepperoni, red onion, and red pepper

3. Chili

We're visiting with my mother-in-law In Virginia. I'm taking the ladies out to lunch tomorrow for Mothers' Day so the MIL decided to make authentic Tex-Mex chili for tonight since she's originally from Texas. (I know, I know. There are a thousand different "authentic" recipes but this is my MIL!)

She made it spicy with ground beef and pork with chili beans, jalapeños, onions, chopped celery and what smells like an awesome tomato sauce. We'll have taco chips and a mixed green salad with the chili. Dos Equis beer and lime-flavored ice water for beverages.

Chocolate covered strawberries for dessert, although they're a bit out of character for the dinner.

could have her Texas citizenship revoked for putting beans in the chili.

Just kidding, of course, sounds great. Maybe Tex-Mex makes the beans okay?

Actually, I think she renounced the Lone Star State years ago since she's lived in northern Virginia for 40 years. She's actually become a Washington Football Team fan!

But maybe you're right about the "Mex" part. Regardless, it was delicious and I had two bowls.
