I made a lower carb blueberry pecan danish for her. I found a recipe last winter for a really surprisingly delicious low carb pastry. I made a nut-filled danish the first time, and then left the stevia out and made pizza dough the 2nd try. Today, I cooked frozen blueberries, chopped pecans and a little honey into filling.
I don't like the taste of baked stevia and my daughter isn't watching carbs like I am, so I used Morena sugar in the dough. It was a little soft to braid, but it didn't look horrible and she said it tasted really good.

MY son's birthday was yesterday, too! I didn't make anything for him, though. He lives on the other side of the country and I am sure his wife made him something wonderful.

(16,949 posts)I used cinnamon and it was really good. The dough is a little dense, reminds me of Danish pastry, or breakfast pastry.
Happy birthday for your son. Our other girl lives away from here. Sometimes we get to see her on her birthday
