What's for Dinner, Mon., May 17, 2021

Swedish meatballs made with ground turkey.

The first salad of the year made with my favorite green, mustard spinach. I have lots growing; enough for many salads. Going to put in chopped apple, toasted walnut, celery (from garden) and fennel, shaved very thin on the mandolin.

Dessert: A fruit tart I bought from the bakery. It has cherries, raspberries, apple. a little rice pudding on the side.

1. Meatless Monday, a new to me Indian Butternut Squash Soup

I have some frozen butternut squash

instructions- 1. Add some oil to a large saucepan and sauté some garam masala for a few minutes until fragrant. Add some chopped onion and cook until softened.

2.Add the squash to the pan together with some coconut milk, chicken stock, turmeric and ground cumin.

3.Carefully pour the soup into a blender and blend until smooth. Taste for seasoning and add salt and pepper if desired, blend again.

4. Serve in small bowls garnished with a swirl of sour cream, if desired.

I am adding a hot buttered garlic naan on the side.

We love Indian cuisine so I'm going to try this next time we cook up some vindaloo.

Pork ribs marinated in spicy homemade BBQ sauce.

Grilled potato wedges. Marinated florets of broccoli also get grilled.

Cookies for dessert.
