What's for Dinner, Tues., May 18, 2021

Posting early due to working late.


I'm going to actually have what I fixed last night but never got to enjoy. That's because I didn't finish up until late and by then I had no appetite.

Swedish meatballs using ground turkey. I'll serve them over egg noodles.

The tossed green salad from last night, also.

Dessert might be a little different tonight, though: vanilla mochis.

Frick's bologna, Hellman's mayo, a little sriracha, arugula, red onion, Sourdough bread. Store-bought german style potato salad

When we were kids, my mom made fried bologna, using the thin slices of Oscar Mayer. It was pretty decent, considering that kind of bologna is pretty bland. The stores here sell the large "gourmet" Frick's bologna



Frick's is a local place, with good sausage, bacon and ham. The bologna is actually very flavorful, unlike national brands. I cut about a half-inch slice, and make several incisions to keep it from curling, and fry until it's a nice brown color on both sides.

I never know what time he will be home but I try and have something ready, even if its midnight.
Tonight we are having hard shell, ground beef Tex-Mex style tacos and a couple jalapeno poppers for an appetizer. I can reheat the taco filling and bake the poppers in the time it takes takes him to drive home.
He also requested M&M cookies, the 2nd run is in the oven now.
