What's for Dinner, Tues., June 1, 2021

Posting early due to working late.

Turkey meatballs with mustard-mayo sauce that has chopped scallion and black pepper.

Spaghetti with olive oil and roasted garlic.

Tossed green salad using greens from garden like butterhead and mustard spinach. Homemade dill-onion dressing.

Dessert: tea biscuits, tea, and blueberries with vanilla pudding.

1. It was lunch but I made my first sous vide: London broil

Cheap, on special. 7 hours at 130. Tender. Made a lovely au jus. Yellow rice. Homemade hot mustard.

Now we’re so full I can’t picture dinner. Could be tilapia soaked in milk to make me not despise it. Makes it not taste like dirt.

Could be tasty tuna and a wee bit of Mac n cheese.

7. Taco meat & fixings on top of fritos/corn chips

I first had it at a Texan music festival in 2004/5. It was a fund raiser for some group

Cut the top off a bag of then 25cent sized Fritos, topped with taco meats & fixings like guac, sour cream, salsa.

I didn't have corn taco shells, the flour burrito are frozen, but I did have a bag of corn chips.

Put some chips in a bowl, and tag dah! Walking Tacos, modified

3. Empanadas

Empanada Fusion has evening drop offs around Pittsburgh and sometimes one is in my neighborhood. Can’t pass up a good empanada and these are very good empanadas.

5. It's really hot here in Western Washington, so dinner will be cold tonight

Tuna salad on an onion roll

Small salad of lettuce, grape tomatoes, cucumber and red bell peppers, anointed with a bit of buttermilk Ranch dressing

Natural vanilla bean ice cream with fresh sweet cherries for dessert.
