What's for Dinner, Wed., June 2, 2021

Last edited Wed Jun 2, 2021, 05:49 PM - Edit history (1)

Chef's salad. Avocado, hard boiled egg, tomato, daikon radish, green, red, and yellow pepper, scallion, Swiss cheese, ham slices, glazed tofu.

Dessert: Some kind of German layered cake. Bought it a bakery. Has almonds on it.

on edit: I had to take the ham out. I didn't like it. I'll make a Swiss cheese sandwich to go with the salad.

I added mixed vegs to the creamed chicken.

I had been using Aldi's coconut flour to make low-carb biscuits, and they were fine. I got a bag of Bob's Red Mill coconut flour and used it for this recipe. I don't usually notice a difference in quality, but I have to say that these biscuits had a better texture than the ones I made with the other coconut flour.

I found a good recipe for coconut flour biscuits online and have used it several times over the last year.

Dessert was a bowl of strawberries.
