I'm having barbecued shrimp that was sent home with me from last night's shore dinner. Hoisin sauce for the shrimp. That and corn on the cob. Potato salad with dill.
Dessert: strawberry mochis.
To drink, ginger ale and pomegranate juice.

(38,601 posts)Just quick and easy. Chorizo, hot Rotel tomatoes, fancy dark red kidney beans. Will enjoy with low carb bread and butter. Wine or cocktails of some kind.

For me:
baked salmon
green beans with bacon bits
corn on the cob
garden salad with leaf lettuce TJ brought home from a friend's garden. Lots of broccoli in it!
For FLFC I have a number of options besides treats and dog food:
baked chicken thigh with lots of skin - skin is the best part according to him
pork/beef meat balls (chopped)
I can never guess what he'll decide to eat from day to day.
I'll offer him apple slices and watermelon after his meat course.

(68,539 posts)The insurance company won't insure us if I leave early...so I had Frozen pizza doctored up like you do... gluten-free version. And it was quite good.

I put sliced Roma tomatoes, cremini mushrooms (soaked in Chianti), shallots, and minced red bell pepper.
Drizzled olive oil, then added more grated mozzarella & ribbon parmesano.
When done, ground park & red pepper flakes.
Came out good!

Perfectly boiled eggs. Egg slicer made them into eighths.
A melange of Hellman's mayonnaise, Dijon mustard, horseradish, chopped fresh dill and chives, and pickle relish.
Gently combined.
So good that Dean & DeLuca would be selling it for $12.99 a pound.

(64,957 posts)Pan seared (hot!) chicken breast with sauteed bell pepper & onion.
Seasoned with minced garlic, black & red pepper, salt, paprika, 5 spice, lemon juice & zest, a pinch of soy sauce & 6 ounces on PINO grigio.
When the sauce reduced (viscosity of gravy), I piled the veggies on the chicken, and put in a 170° oven for 10 minutes.
It came out super tender, but juicy. So easy to dry out white meat.
The side was a rice pilaf with brandy, pepper, nutmeg, salt & a pinch of raw sugar.
No dessert, though.
My wife really loved it.
I cook 2 or 3 times a week. I'm very adventurous with herbs & spices. And use wines & liquors in nearly everything.
