What's for Dinner, Tues., June 29, 2021

I've decided not to have meals today, just mini-meals. Too hot: 92 here in the NY/NJ area.

I have put together the following and can go take a little here and there whenever I feel hungry. Of course, I will probably have a large salad tonight when I watch the evening news or Chris/Rachel/Don Lemon and others I have DVR'd. Yes, I watch 'em all, every night.

cold salmon with dill-cream sauce

salad, tossed greens with tomatoes & basil, celery, carrots, scallion

cold turkey salad with mango; has honey dressing

cold pears with ricotta-mint rolled up in a pita

cold stuffed sweet peppers. Stuffed with herb-cream cheese, some with seeds like sesame or chia.

stir fry rice

avocado toast mixture except on club crackers or chive-garlic pita crackers. A few drops of hot sauce and a little piece of crisp bacon on each.

or put our toaster oven, roaster or crock pot out on the porch so it doesnt heat up the house.

95 now and expecting 100 degrees for the high. I'm making a cold shrimp salad on baby greens and a grilled peach with a dollop of creme fraiche and a drizzle of honey.

Romaine lettuce with other mixed lettuces from the garden, baby spinach, tomato, red onion, cucumber, shaved carrots, and cold cooked chicken that I baked earlier this morning. Homemade ranch dressing.

Hard rolls and iced tea.

It’s 93 here right now in NE Ohio.

I think it must be 10+ degrees under the trees and when there's a breeze from the river, it feels great. They are keeping my house cool, too, so today, I stir-fried Kroger Italian blend vegs, with seasonings, and then jerk chicken. There will be enough for dinner tomorrow. I've got my a/c on 73, and feel so lucky

I'll have a salad later, it's already chilling in the fridge.

Beef, pork, chicken, various salads, wine, whisky sauce, sliced baguette, etc.

In Holland due to emergency travel (mother in law moved into a care home).

So, the Dutch relatives threw a last minute celebration in honour of my birthday. It was nice!

This is a good recipe, well suited to those of us who take recipes as suggestions, rather than as strict guidelines.

The guys here don't like brown rice, but I prefer it both for taste and health reasons. So occasionally I cook a bunch in my Instant Pot and freeze it in single portions in snack size baggies for me.
