What's for Dinner, Mon., July 12, 2021

I was elated when I went to WF this morning and found they have the shrimpburger back in stock. For weeks, maybe a month or more, it had been missing. I was hoarding one last shrimpburger in my freezer, just in case they permanently discontinued it.

Now it is back as a Creole shrimp burger!! So of course I had to buy it. That is what I will have tonight: a Creole shrimpburger on Brioche roll.

In addition, a baby spinach salad with cherry tomatoes and basil.

They also had some outrageous chocolate bars so I bought a few of them, too. One of them is milk chocolate with toffee and almonds. That will be about Rachel time.

And of course, later on tonight, a delicious bowl of chilled cherries and watermelon. That will be about Don Lemon time.

as dinner in the evening is not a regular thing here any more.

We had Andouille sausage with green cabbage and onions in mid-afternoon.
Later I'll eat a garden salad.

FLFC has had some meatballs from frozen and well as some of the sausage. He turned his nose up at the fried chicken skin he loved yesterday. He's not been eating much lately.

Then a honey roasted chicken thigh, parmesan pasta and peas w/onions. Skipping dessert tonight.

Sliced mild Genoa salami, olive medley, fresh mozzarella, cherry tomatoes, celery and toasted Italian bread.

Pasta
Cappelini with a mushroom marinara sauce topped with fresh basil and toasted pignoli nuts.

Secondi
Chicken Francese with a small Romaine salad on the side.

Dolci
Neopolitan ice cream

I now it sounds like a lot of food but they're all small portions.

Hey, NJCher, I've never heard of a shrimp burger. Are the shrimp ground up like with a hamburger? What binds the meat together? I'll have to make a trip to Whole Foods since they sound yummy.

The binder on the shrimp burger is mayo and egg yolk. It's whole shrimp, not ground up. And they are wild-caught shrimp, not farm-raised, which we try to avoid. It's Whole Foods' brand and they package quite a number of different seafood products under "Whole Catch."

The other ingredients are carrots and peppers and the spices are chile peppers, celery seed, red pepper, oregano and thyme.

I just finished mine and could cry--'cuz I want another one.



Here's a link to the product at the WF site, but it's the old packaging. The new packaging is a different color--shrimp color.

----re portion sizes, I always think that, too. If you're going to have a variety of flavors and foods in your meal, though, the only way to do it is with small portion sizes. A typical serving size for chicken here would be 3-4 oz.

Now veggies--that's a different story. A typical size for a salad for me would be 1.5 cups, and that's without the added veggies! The RG is more in the 3/4 cup range.

Best pizza in town. I wouldn’t usually get pizza on a hot Monday night…but I’m busy getting ready to meet my cousin in Walla Walla, WA tomorrow…we’re touring wineries for three whole days. I’m so excited. It’s a six hour drive for me so I need to leave early. Trying to get my guys ready to handle the house, the garden, the animals etc.
