What's for Dinner, Fri., July 23, 2021

I'm going to a friend's house for dinner. She is making chicken and I am making the salad.

The chicken is going to be Thai-style--lettuce wraps with the chicken and also vegetables like carrots, red cabbage, radishes, etc.

My salad is just a typical tossed green salad, though. We're trying out two of her new dressings which have 0 calories. They are really good and don't taste like diet salad dressing (even though my friend is thin, she stays on WeightWatchers for cholesterol reasons). I'm putting in carrots (thinly sliced), peppers, tomatoes, and some fresh Persian cucumbers I just picked up.

I have this interesting and fun topping for it, though. It's called "Keto Savory Salad Topper" and it has slivered almonds, walnuts, pepita, sunflower seeds, and chia cheese sticks.

In the next post I am going to post a pic of how my zucchini-tomato dish came out last night.

Layered with onion, garlic, mozzarella, tomatoes, topped with parmesan and chopped chives.

Sesame oil, ginger and Sriracha sauce.

My go-to quick meal.

Spent the last 48 hours at the emergency vet, 3 hours away, with my 19 YO kitty boy.

He's eating again and so am I

baked salmon from Costco, the kind with butter and basil

Leftover potato and broccoli salad

We still have homemade cherry=chocolate chip ice cream if someone feels so inclined.

Hubs is traveling for our business and my kiddo is working…I’m keeping it simple….a BLT on sourdough with fat red tomato from my garden….cucumber salad on the side and my guilty pleasure, salt and vinegar kettle chips.

Sautéed some spinach and garlic as a side but ending up tossing every in one bowl with some shredded mozzarella. It was a good decision.
