What's for Dinner, Sat., July 24, 2021

Cuban pizza. Has banana pepper, creme fraiche, Canadian bacon, mozarella, Emmentaler cheese.

Baby arugula salad with cherry tomatoes, parmesan (grated), and toasted pine nuts.


Dessert: sliced strawberries and blueberries over crumbled lemon cookie crumbs. Yogurt on top, along with sliced almonds.

Cold decaf Earl Grey.

1. Lemon Salmon with Lima Beans

I've made that before a few times, it's pretty simple and tasty. I use chicken broth instead of water.

2014 Black Mesa Winery Velarde Cabernet Franc. One of the bottles I got on a trip to New Mexico a couple years ago.

2. Bean soup

I grabbed some bean soup out of the freezer and it is warming on the stove I believe it is a white bean and ham soup.

I think I will have cucumber and tomato (from TJ's plants) with balsamic vinaigrette as a side.

Watermelon afterwards.

FLFC is snoozing on the couch. I don't have much ready to offer him, but we will figure something out. A
Steak-umm from the freezer is a possibility.

It is a work night for TJ so us guys are on our own.

4. Chicken pilau

it was supposed to be with collard greens, but there were none at the Farmers Market or the more-upscale-than-my-usual grocery store, so I used chard. It was tasty enough that my husband said he wanted leftovers for his work lunch tomorrow.

There was, however, cucumber and mint at my Farmers Market, so we had a salad with those, yogurt, lemon juice and garlic.

Winking Owl Chardonnay from Aldi as the wine.

My kiddo gets off work at 7pm and we’re having grilled bacon burgers with thick tomato slices (from my garden) on brioche buns…oven baked fries and a cucumber salad.
