What's for Dinner, Mon., July 26, 2021

Mini-meals today since it's so hot. Coming up is a vegetable frittata. It will have zucchini, peppers, and cheese. I might serve the frittata in a wrap and drizzle some pesto over the top.

Later on, I'm going to figure out what to do with the freshly cooked garbanzos and some tomato sauce I thawed from the freezer. I have a sausage that could go in there for some type of mini-meal.

Watermelon for dessert for sure.

5. Steak

I picked up a couple of sirloin tip steaks this morning. Cooked them sous vide for three hours at 135, then seared in cast iron—perfect every time. Salad and cantaloupe on the side.

6. Lettuce wraps.

Ground pork with a spicy hoisin sauce with jasmine rice, scallions, jalapeños and toasted cashews. Cucumber salad on the side. We were going to have watermelon but I gave the little half melon I had to my chickens. They LOVE watermelon and I love to watch them eat it.
