Breaded zucchini rounds. The breading has parmesan and finely chopped herbs.
Lettuce salad with raw vegetables like peppers, tomato, celery, and cucumber.
Dessert: cantalope

Changes I made - frozen cooked shrimp already peeled with tails removed, no butter, no mayonnaise, no hot sauce, 8 ounces of low fat sour cream, all sharp cheddar cheese, home grown African Blue Basil, straight off the bush.
It turned out delicious. The only problem I had was that Publix only sells yellow squash (and zucchini) in packages, so I also have a huge pan of those cooked with carrots, sweet onion, garlic, and more of my African Blue Basil.
I grew African Blue Basil since regular basil does not do well in North Florida. The blue basil has been growing great all summer so we had lots of it - I may have put closer to a half cup of chopped basil into the quiche and more than that in the vegetables - plus I have more stashed away!

(4,616 posts)Chicken, corn, black beans, minced onion and bell pepper, two types of cheese, lots of chili powder and a little cayenne, topped with sour cream, tomatoes, and a little green Tabasco sauce. I hate red Tabasco sauce, but the green one is really good with sour cream.
