What's for Dinner, Wed., Nov. 3, 2021

Chili! I'm excited about making it as it is a big nippy here and I'll be coming in from outdoor work.

Ground beef, kidney beans (I know a lot of people don't like them, but I love them), onion, green bell pepper, onions, cumin, green chilis, jalopeno.

I like to chop red onion and grate cheddar cheese to put on the top.

Tossed green salad to go with it, using ruffly red lettuce and arugula from my garden.

Starting it now. I'm a slow cook. The RG is a fast cook. He prepares meals in 30"; me? Hours!

But I do CAYGO.

I know...it isn't St. Patrick's day. Backstory...there's a little grocery here in town called the Orange Street Food Farm and the meat department manager hails from a large Irish family from Butte, MT. He makes the most wonderful corned beef from rib eye roasts. The recipe is from his grandmother. They are just amazing. You have to reserve your corned beef by the mid February or you are out of luck. I usually buy 3 of them to get us through the year. We have a wonky St Pat's menu but I have a couple boiled cabbage haters in the family...so we're having:

Corned beef
Napa cabbage salad
Smashed garlic potatoes

Irish tacos on Friday with the leftovers.

Kidney beans from dry in the chili

FLFC had some beef without the seasonings.
