I've been looking for a recipe for asparagus soup that doesn't involve a blender. I'm not a big fan of pureed soups. Couldn't find one so I made up my own.
I sauteed about half an onion and some chopped mushrooms in butter, then added a few tablespoons of flour and cooked for a few minutes to get rid of raw flour taste. Next I added chicken stock and brought to a boil. I cut the asparagus into 1/2 inch length, reserving the tips, and added to the pot along with some cubed, baby red potatoes. I didn't peel the potatoes. When that was almost tender I added the asparagus tips. When everything was tender I added half & half and about 8 oz. of shredded cheddar. When it was melted I tasted for seasonings and added a few slices of bacon that I had fried and chopped.

(58,785 posts)or maybe just part of the solids, leaving the rest. I like the variety of flavors and textures. So it's usually either broth with just whatever might cooked into it a bit or perhaps thickened a bit as you have.
