INGREDIENTS
1 cup steel-cut oats (pinhead, not rolled)
Salt
Extra-virgin olive oil
1 large egg
A few strips of roasted red pepper (jarred is fine)
1 teaspoon chopped scallion
Red-pepper flakes
Zaatar
Instructions
Boil 3 cups water***(on suggestion, I'm using half vegetable stock***) in a small saucepan. Add oats with a big pinch of salt, and simmer over low heat for 20 minutes. Cover and let rest off heat for 10 minutes. Taste and adjust salt. Beat in a little boiling water if oats are too firm.
In a small skillet over medium-high, heat 1 tablespoon oil. Fry egg sunny side up.*** I'm baking the egg in an oiled metal food prep bowl***
Put oats in a low bowl and place egg on top. Garnish with strips of roasted pepper. Sprinkle with scallion, red-pepper flakes to taste, and finish with about 1/2 teaspoon zaatar. Drizzle with a little more olive oil.
I'll add the last 2 vegan sausages on the side.
Hot decafe tea.

(43,452 posts)Deluxe version. Thicker crust, bigger, with all the toppings blended into the sauce, mushrooms on top, mozzarella & parmesan.
Stores are struggling with the price increases, they don't update the shelves. Asparagus on the shelf at $1.99 a pound, $3.99 each at register. I questioned it. She had to flag down a stocker, they had a discussion, a manager came in, the customers are waiting in line, they finally decided to stop trying to figure out where the problem was, and the manager rang it in at a flat $1.00. Then had to be summoned again to accept cash for the adjustments. The cashier seemed quite pissed at me!
And Walmart prices are rising faster than bread. They stopped pricing flour, removed the price check scanners. I buy it elsewhere. Corn meal went from $1.18 to 1.39.
Grocers will be surprised when their volume dries up. Then they'll try to make up the difference on the cheaper items, but volume won't budge.
