This will be 2 pound cakes for a fundraiser. They will be on the silent auction.
One of them will be chocolate.
I have not decided on the second one.
Rum? Bourbon? lemon? traditional ?
In the live auction, winning bidders can call me for the cake they want at the time they need it. Usually I offer a max of 6
It's nice to be able to bake and not having it lie around the house demanding that I eat it

(22,231 posts)If they do not demand cream cheese frosting, I frost it with Ermine which is the original frosting for this cake.
It is very light and not too sweet. I love it on coconut cake.

You can change it up a bit with Limoncello in the cake and the glaze.
I make a lemon syrup and poke holes in the cake when it is still warm and let it soak in. I do save a little to paint on the outside of the cake.

(3,054 posts)My favorite is traditional white cake with white icing, but I also love carrot cake with cream cheese icing, German chocolate with the coconut icing, butter cake ( yellow cake ) with milk chocolate icing, and spice cake with cream cheese icing.

(22,231 posts)It is a ridiculously easy recipe. It calls for cooked carrots instead of shredded raw carrots, which adds to the moistness. (also includes crushed pineapple, coconut, chopped walnuts and NO raisins. )
The cookbook says bake in two 9 inch pans. HA!
It needs to be 3 and if you use 8 inch you will have enough for 2 cakes.
I used to have a lot of problems transporting the cake when I made 9 inch layers - some near disasters!
My husband suggested trying a larger diameter pan, so I purchased a set of 10" pans and now I bake it in those. It is perfect and the cake transports much better.
The cake is very heavy!

(22,231 posts)My husband always hopes the bourbon cake will stick to the pan or crack so he gets it for himself.
Bourbon cake is just a rum cake with different liquor.
WHen the cake comes out of the oven, poke holes in the cake (lots of holes) and drizzle a rich syrup made with the liquor, butter and a bit of sugar all over the bottom of the cake. Save enough syrup to glaze the cake when it has cooled.
Then when you turn it out, glaze it with the syrup. I paint it on with a pastry brush.

I didnt eat the whole cake, but it was so good my three year old granddaughter had two slices.

(50,911 posts)cake and my "party" was a zoom meeting where each member ate cake of their choice, but hopefully something new for them.
For that birthday, I made a recipe I found here on DU. It sounds horrible but was so delicious, I can't even tell you. It was a parsnip cake (think carrot cake - same idea) with cranberry filling and a cream cheese buttercream.
Last year, I made a new cake (couldn't interest the pod in a parsnip cake! ) but I made an orange cake.
I am totally going to take this idea of the lemon with lemon curd and raspberry jam for this year's creation. Can't wait!

(22,231 posts)one of the hosts testing positive for COVID. This meant I did not need to have cakes made to put on the table so I did not bake anything yet.
However pound cake TBD did OK One went for $50 and the other for $35 (silent auction). As soon as I know when they are needed, I will bake them.
However the live auction of the 6 Special Occasion Cakes was a blockbuster!!! Those cakes ended up going for $100 each. WInners will choose the cake and the date.
I already know I will be baking an Italian Cream Cake in late March - this is an annual thing for the purchaser.
Not sure about the other 5.
I started offering this for the live auction back when we had NO money and could not buy anything, but thought the cakes might bring in some $, which is what happened. I think I have been doing this for 20+ years.
This is my Sunday School class fundraiser; last December we lost a beloved class member to COVID and his wife passed away in May from Lewy Body Dementia. John was my biggest fan, and really promoted the cakes - especially the carrot cake! They always bought 2 cakes. I baked a chocolate pound cake for the family when Liz died, but I still owe them one more. Their kids are all coming in for Christmas so I'm taking them their dad's favorite carrot cake. It is very sad to know this will be my last cake for this family.
The auctioneer for the cakes gave a sweet testimonial for John and his promotion of the cakes. I truly think that helped drive up the price.
