I took the rest of the turkey and ground it up. I took the rest of the bread I made on Thanksgiving and made crumbs from it. I mixed some of the turkey, some of the crumbs, with onion, celery, garlic, some olive oil mayo, and the spices I wanted. Made patties and browned them in a little oil. Topped with hot chili garlic sauce. They sure don't taste like leftovers!

(2,673 posts)We had six kids in my family, plus 3 adults, so there were seldom leftovers, even on Thanksgiving. My thrifty mother took the bones and made what we all called "Turkey Bone Soup". She's simmer the bones with what little meat was left on them in water with some onions, celery and a carrot or two.
I don't remember how long she cooked the soup, but right at the end, she'd put in some rice to cook along with the other ingredients. We six hungry kids gobbled that Turkey Bone Soup right up!

I made giblet gravy. I roasted the turkey in a bag, and got a lot of broth.
I used that broth to make a big pot of soup. When I make broth from the bones, it is cloudy, so I didn't boil them down this time. I'm not sure if there is a trick I'm missing when I cook the bones.
