What's for Dinner, Thurs., Dec. 2, 2021

Curried Squash and Mushroom Soup. Recipe calls for a butternut squash, OJ, onion, garlic and of course, mushrooms. Cumin, coriander, cinnamon, dry mustard and ginger to season. The halved butternut is in my slow cooker now, along with broth, onions, garlic, and herbs to flavor it.

Rain forest crackers to go with it. These crackers, in case you're not familiar with them, are little toasted breads that have figs, cranberries, and nuts in them.

Arugula from the garden, just to munch on something green. No dressing.

The no sugar toffee from my brother was terrific last night. Tonight, though, I'll have a piece of angel food cake with some Greek yogurt and blueberries.

German potato salad on the side (same plate), sliced tomatoes.

Note: the sourness of the potato salad goes well with the brown gravy. Also do the same thing with sauerkraut, except put the gravy directly on top of it.

But I didn’t feel like eating a bunch of noodles so I made a salad for myself.

Great Lakes crisp lettuce, grape tomatoes, olives, tuna chunks, and roasted portobello mushrooms. Balsamic dressing.
