1. I promise you if you are cooking onions (or baked potatoes as he suggested)

At 350* for 30 min they are NOT cooked throughout.

For best results kick up the temp to 400* and cook for at least 45 min. And don’t forget to throw on a half dozen cloves of garlic, too. Trim the tops of garlic about 1/8th in and drizzle olive oil on top. Absolutely heaven!

Shmear that garlic on a slice of toasted bread and prepare to swoon.

2. I've made these, from having seen the video before.

30 minutes at 350° is fine for onions. I agree with you about baked potatoes, the temp is too low and the time too short. I use a recipe for roast potatoes which parboils them for 10 minutes, and has bakes them at 400° for 45 minutes. And these are peeled Yukon Golds, usually cut in half, not Russets with the jacket on.
