Then I'll use some of the meat to make scalloped potatoes and ham au gratin for dinner, today. I still have some Brussel sprouts sauteed with onion, mushroom, garlic and yellow squash to finish up. I think that will go well with the main dish.

There's a head of cabbage I need to use, and some beef in the freezer, so tomorrow I'm making beef, barley soup. In another week, or so, the Christmas ham bone will go into Navy Bean soup.

I plan on a very soup/stew/curry/casserole intensive cold weather comfort food season.

just to get the bone for beans. Even though I have an instant pot, I cook the bone (w/plenty of meat attached), in the crock pot over night with lots of onion and garlic. Can't beat it.
