What's for Dinner, Fri., Jan. 21, 2022

Pizza made using a flatbread crust. Peppers, onions, mozzarella and maybe anchovies. While I'm using my own homemade tomato sauce, I think I'm going to add some sundried tomatoes to add some depth to the flavor.

Tossed green salad, of course. This one has the usual carrots, peppers, onion, celery, and tomato. Caesar dressing.

Dessert: nuttin'. 'Cuz I snacked on some chocolates this afternoon. My stash from the RG is almost gone and we had a bet they wouldn't last until the end of January. Looks like I'm gonna' lose.

PJMcK, for my salmon stuffing, I cook the shrimp and chop it up, adding chopped celery, onion, and garlic. Lemon juice and some zest. Breadcrumbs. Whatever herbs I have, and in this case it was thyme and marjoram. I use mayonnaise mixed with some half 'n half to bind it together. Oh, and a little cayenne or red pepper flakes.

1. Breakfast for dinner

I'm solo for a couple of days in the mountains and I want pancakes with syrup and bacon. I also picked up some strawberries.

It's different than the usual breakfast though, because I'm going to have a snort of brandy with the cakes!

2. pot roast... sort of

Al had wanted some steaks, but he bought "chuck mock steak" which needs to be braised like a pot roast. (I really should never let him shop without me).

Anyway, I'm cooking them like pot roast, w/ potatoes and carrots and I'll serve some green beans with everything.

Dixie is curled into a little ball.

Plans are for a yellow panang style curry with chickpeas and assorted veggies over jasmine rice.
Hit decafe tea.

The back is slowly healing and I'm getting around pretty well although I still can't bend over from the waist. Thank heavens my knees are still good!

I had my third EGD last week (after a solid week and a half of nothing but broth and juices) and it resulted in a rather acerbic discussion with my GI doc which has led to a referral to an "advanced" GI specialist in Charlottesville. I have a video consult with him next Tuesday and w'll see what happens after that. The EGD itself was...well, I think the doc blew a lot more CO2 into me than he needed to. I was blown up like the Hindenburg and miserable for 5 days until it all passed. I will be mad at that man for the rest of my life because I think he did it on purpose after I laid into him about his overscheduling and not caring how his patients felt. But at least it got me a referral. And maybe some help, because he didn't.

on brioche buns. Since I’m firing up the grill, I might cook some bacon out there for the burgers as well. Oven baked fries with a little cheese on top. What the heck…it’s Friday.
