Related: About this forumHave been promising my husband a fruitcake since before the holidays. He just got it today. LOL
It's not one that has to be dosed with alcohol, it can be eaten as soon as it cools. If anyone would like the recipe, I posted it below the image.
Ingredients:
2 cups chopped dates
1 cup raisins
2/3 cup butter
1 1/4 cups brown sugar
1/4 cup dark syrup (I used maple syrup)
1 1/2 cups hot water
2 eggs, beaten
8 oz candied fruit peels
3 cups AP flour
1 1/2 tsp cinnamon
1/2 tsp nutmeg (could use a wee bit more)
1 tsp baking soda
1 tsp baking powder
1 tsp salt (regular table salt)
3 cups pecans (I only had 6 oz pecan pieces, but it turned out fine.)
1 cup marachino cherries (I omitted)
6-8 oz candied cherries (I had candied pineapple, so that's what I used.)
Directions:
Add the first six ingredients to a sauce pan, bring to a boil and allow to boil for 3 minutes. Take off the stove top and allow to completely cool.
Once cooled fold into the beaten eggs and candied fruit peels.
In a separate bowl, combine all the dry ingredients, mix well into the boiled ingredients, eggs and candied fruit peels.
Add all the remaining ingredients, mix well.
Put batter into a greased and floured tube pan (I only grease pans, not flour them. Used butter.)
Bake at 275F for 2 1/2 hours.
Cool before removing from the pan.
(This recipe was given to me by one of my old bosses who used to bake it and bring it to work. It's my favorite recipe at of the couple I've tried.)
