I'm having people over for dinner!

It’s been two years! To say that I’m excited is an understatement. I’ve been plotting menus like a maniac. Im leaning toward something Mexican, maybe chicken enchiladas with guacamole and sides, possibly a black-bean salad.

..to single digit temps ..8° 😱..outside. and 2" inches snow . Sure not a whole lot but a dusting paralyzes the city ..inches shuts it down..or delays work, schools--retirement does have it's benefits in that, nice that I m not out there driving on the iced roads.

Damn 🥶that bowl of posole is getting yummier by the minute..except don't have ingredients to make..perhaps manana will go to little tiendita down the road (live in rural outskirts of Albq.) has a meat market carries fresh fruit and veggies as well as Spanish New Mexican main staples like chile, posole, frijoles etc..

..shh.. can't let my 90yr old very. Picky mother know..even fooled my just as picky sister--pero didn't skimp on meat..bought good cut from butcher..and we'll never skimp on chile..lucky we can get locally grown chile products as my father used to grow.

There's a Mexican brand that Espanoles from Nuevo Mexico use (una Chicana (a Chicana is a social justice advocate ..just get the fuck out of our way kind of woman) gave me the cheat recepi..by Juanita's (not Goya bc well we're boycotting that SOB!) bc told her that I could never make posole from scratch y forget sabroso without having a bitter taste. She said--key is to making posole from scratch you have to rinse the fuck out of it (Chicanas speak that way..shhh but tell my very very very conservative parents ..ay would give them a heat attack ...they're Catholic Democrats or borderline republicans, and mi Hermanas started listening to faux news almost lost her to the dark side..she's okay now so we had a decent dinner which always inc politics, familia, dios..in no particular order ] anyway shortcut to making really sabroso posole using can..so couldn't find Juanita's brand ..which has much more sason' than say Bushes very bland brand..so called up Chicana friend ..said no problema ..just prince the fuck out of it and had your own seasoning ..y it came out mas sabroso...of course red chile was ay ..picoso pero mas sabroso...still had to cook pork for hours until tender...then add posole to cooked meat and stock ..,in all if it past the Madre test ..she brought the empanadas y bischocitos so if posole would have been a disaster..well cafe y postre would have saved the day.

I personally don't care if they are fully vaxxed. And yes, it's my decision and I wont force my views on others...however, they ARE my views.

Sounds great. I've been meeting friends at restaurants monthly. We are all vaxxed and boosted. Last month there was no one in our area so we were the only table. I'm pretty careful and am masked up too.

I just invited my sister over for her birthday dinner so hopefully her boyfriend will agree to come or she wont (boo)! We are all vaxxed and boosted except my son who is fully vaxxed and 36. She loves steaks, but they are expensive so thinking of Mexican as well. I make this green chili chicken enchilada dish that's amazing, and a big salad and beans makes for a great dinner.

Hope she comes! We will open all the windows first thing and we have a giant table where we can easily distance.

...made green chile chicken enchiladas after holidays ..got tired of posole y tamales. Hadn't made for a while ..green chile is easier bc don't have a blender to blend the red chile pods. Cheated a bit by buying rotisserie chicken ..just used breast meat (my little dog enjoys the rest..mix bits for him in his regular food) what made by dish even mas delicious (that my 90 yr old very picky mother even liked ..shh didn't tell her. Used rotisserie chicken) ..it was a success..a little picosa (too hot) bc bought hotter chile in fall (had a sack of green chile roasted in fall then keep in freezer for use in winter, spring) but parents like it hot pero better be tasty otro storia (another story) anyway..used golden cream of mushroom soup (,instead of just cream of mushroom soup) ..and that elevated the smooth creamy texture ..ay it was excellente!

Anyway..red chile or green chile enchiladas. Stuck here in single digit temps (woke up to 8° this morning is now 13° ) I'm thinking of making green chile stew for lunch something to warm me up. Anyway ..good luck with the dinner.

I have a recipe for sauce that’s really quick and uses ingredients I usually have on hand. I haven’t bought the canned stuff since I discovered it.

Here’s the recipe:

Mix together:

3 Tablespoons flour
1 Tablespoon chili powder
1 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon oregano
1/4 teaspoon cinnamon

In a saucepan, heat:

About 1/4 cup oil—olive, vegetable, whatever

When the oil starts to shimmer, add the flour mixture and cook for about 30 seconds, whisking the whole time.

Add:

2 cups broth (any you have on hand will do—I use Instant)

Keep whisking until the mixture thickens, then add:

1/4 cup ketchup (Really!)

..chicken stock bc may take away from sabor [flavor] of red chil`e. -& Chile es the star...should be made as simply as possible.
