(16,955 posts)I was experimenting, figured if the rolls didn't turn out, the next step would be bread pudding
I started a sponge this morning, but I knew it was going to make more bread than I needed for a loaf. When I added more flour, I only took part of the dough to knead. Got the bread set, then started adding to the dough that was left, which was about 2 cups. Added butter, beaten egg divided, sugar. I added cinnamon to the flour on the board, and kneaded it, then shaped it into a rectangle.
For the filling, I used about a cup of ground walnuts, graham cracker crumbs, cinnamom, butter, the rest of the egg, sugar, and a couple drops of orange extract. It made a paste that I spread on the rectangle of dough, then rolled it up and got 12 medium sized sweet rolls. I baked them at 375 for 8 minutes, then at 350 for 10 minutes. I made a glaze with honey, vanilla, powdered sugar and water, but it wasn't rich enough, so I made a thicker glaze with powdered sugar, vanilla and water. That did the trick.

(2,674 posts)When I make dinner rolls, always increase the recipe so I can have enough dough to make a pan of cinnamon snails.
So cold here today, makes me want to bake something that will make the kitchen warm and smell good, probably have trouble with yeast breads today, so maybe an apple cobbler.
