What's for Dinner, Mon., Febr. 7, 2022

Softshell tacos. I made my own taco seasoning sauce and instead of ground beef, I used a plant substitute, Gardien.

To go on the tacos, chopped red onion, tomato, grated cheddar cheese and iceberg lettuce, sliced thin.

Tossed green salad with spinach, red leaf, and Bibb lettuce. Carrots, chopped peppers, both green, red, and yellow, scallions. Dried cranberries and whole almonds, toasted. Honey dijon dressing.

I also made macaroni salad using tubbettini. Green pepper, red onion, and cheddar cubes; dressing had mayo, cider vinegar, Worcestershire.

For dessert, a slice of yellow cake, milk chocolate, and decaf hazelnut.

Gingerberry kombucha.

Tonight we're having baked beans and sliced kielbasa baked in the oven with onion and homemade sauce.

Homemade coleslaw and Jiffy mix cornbread with niblets added.

Still have a little fruitcake left, as well as the cookies I baked the other day.

The beverage is always water for me, water and coffee for the husband.

TOMATO LENTIL SOUP WITH MANZANILLA OLIVES
yield: 10 CUPS prep time: 20 MINS cook time: 40 MINStotal time: 1 HR

Ingredients

2 tablespoons olive oil
1 medium onion, minced
4 cloves garlic, minced
2 carrots, minced
2 stalks celery, minced
2 teaspoons EACH: thyme, oregano, and smoked paprika
1 teaspoon EACH: salt and pepper
1 cup brown lentils
6 cups vegetable stock, can use chicken stock
14 ounce can diced tomatoes
3 ounces chopped fresh spinach, or baby spinach leaves
1 cup chopped Manzanilla olives
½ cup cream, optional

INSTRUCTIONS
Heat the oil in a large pot over medium-high heat. Add the onion and let it cook until it softens, about 3 minutes. Add the garlic, carrots, and celery to the pot and let them cook for about 5 minutes. Mix in the thyme, oregano, smoked paprika, salt, and pepper.

Add the lentils, stock, and tomatoes to the pot and bring the pot to a boil. Reduce the heat to low, cover the pot, and simmer for 30-40 minutes, or until the lentils are soft.


Add the spinach, Manzanilla olives, and if using, the cream and stir until the spinach wilts.

Al got a gift card to a local place for his birthday, so we're ordering in.

He likes the crab rangoon
We both like lo mien

and I'm trying to pick out a protein dish that has veggies in it.

Brownies for dessert.


Cooked for Dad and Sis tonight. They had smothered pork chops, boiled potatoes and sauteed asparagus.

I love General Tso's chicken. We usually split a large order and get an order of their steamed veggies on the side and a couple of eggrolls each. Also gotta get their homemade hot mustard. It's not the same without freight training my brain a couple times while eating.

If there's any left, I get dibs on them for breakfast cold outta the fridge in the morning.

Your dinner for your dad and sis sounds super yummy, too.

10. Baked Salmon

Tossed whatever sounded good on top and around the fish, and it turned out great. Salt, pepper, garlic powder, Italian seasoning, a little lemon juice, lots of butter, a little squirt of mustard, and some thinly sliced onions. My house smells fabulous right now from the mustard and onion.

Half a baked potato with lots of sour cream, sautéed green beans.

I’ve been on a soda kick for several weeks now and have gained 10 lbs 😳. I’m definitely not overweight, but that’s enough to start making me nervous. All the cookies probably aren’t helping...

Speaking of...
For dessert: 2 Otis Spunkmeyer Chocolate cookies with Reeses Pieces. Frozen dough, takes 10 min to (slightly under)bake them to gooey perfection. They are almost all gone. Sigh.
