Though I am not a biscuit person, I've always thought that pot pie with biscuits looked very appetizing. So, I had a can of Grand's biscuits on hand for such a moment, and some leftover frozen turkey and mushroom gravy in the freezer. Sauteed some onion, carrots and celery, added some peas and mixed that in with the turkey and gravy. As the recipe said, I put the unbaked biscuits on top, and brushed them with an egg wash.
Looked lovely. Biscuits were nice and golden, veggie/turkey mix was all bubbly. BUT, the biscuits were all gummy inside from having soaked up the stew, I guess. Not being a biscuit person to begin with, I just don't cotton (as they say in the south) to gummy bread. Took them off and threw them away. I'll make some mashed potatoes later.
Question: Is this normal? Not my behavior, but the gummy biscuits? What did I do wrong?

(17,000 posts)Personally, Id bake the casserole until the top was hot and put the dough on then. Like drop dumplings. Gummy, slimy bread is disgusting.

(17,000 posts)looks like the biscuits are on the meat and veggies with not very much gravy. Maybe use less gravy in the filling?

(9,580 posts)peas, carrots, celery, onion, and flour to thicken, so I don't think the gravy was overwhelming at all. Oh well, it was an experiment of sorts so I guess I have my answer. I have made some doozies lately.

(22,767 posts)But you could try par-baking the biscuits first, while you heat the filling in the microwave, then combine them for the final bake. I'm guessing that should work.

(2,674 posts)I did not used Grands, but the cheaper kind. I also cut the biscuit dough in smaller pieces, just did this because I like the effect. Don't know if the cheaper biscuits or the cutting them up had any effect, but the biscuit dough came out just fine, baked properly, not gummy, have done this for several times. no egg wash.

The grands biscuits are really thick compared to the croissant triangles and with it sitting on the moist filling - maybe it can't cook through?
I'd try a regular biscuit next time, or just use 2 of the croissant dough triangles to cover a ramekin of stuffing

(15,088 posts)Not from a can, just quick homemade drop biscuits. In my experience, the filling must be boiling hot when you start baking and then you bake a little past when you think its done.
