Tonight I'm going to make another softshell taco from the ingredients I put together the other day. I have to get salsa, though, and I think I'll get a couple types. Tomatillo salsa, particularly.
Here's a pic of the noodle dish I made last night.
Was it fantastic? Pretty good but not fantastic. I think if I made it again I would add other types of peppers and not just have red peppers.
I loved loved loved the tofu, though, which was sauteed in sesame oil until crispy.
Angus beef broiled, topped with lettuce, tomato, onion and melted cheddar cheese and served on a toasted Kaiser roll. Ketchup and spicy brown mustard as condiments.
Potato chips and Klaussen pickles. Klondike bars for later.

I'm wondering if I caught covid today. Very early symptoms, sudden cough, nasal discharge, not much else.
Shocker at the super was cooking oil. What I paid $2.99 Saturday is $3.99 today, and the canola I once bought is $4.29 in the deep discount Grocery Outlet. Regional market the canola is $5.69. They used to go on sale 2/$5. So if baking is your thing, seek oil like they're truffles.
But I did get a whole chicken labeled turkey thighs for 40 cents on the dollar, don't know how that happened. And when they rang up Kiwis @$3.99 and I pointed out I didn't have any kiwis, they took them off and deducted $3.99 again. I said whoa, put that back on, they said no, we can't, you had to wait. So I'm doing ok at the super this week.

(38,533 posts)Back to something simple tonight because I cooked for Dad & Sis.
Our pizza will be bacon, onion, mushroom and extra cheese.
I made a "double chocolate" quick bread for dessert. I'll have it w/ a scoop of ice cream.
Dad and Sis are enjoying a new recipe from my America's Test Kitchen Cookbook: Tuscan Shrimp and Beans. This was actually pretty easy too, It involved a very quick brine on the shrimp, making a quick stock from the shrimp shells, and then cooking everything all in the same skillet: onions, garlic, diced tomatoes, cannellini beans and of course the shrimp. Just as you're taking it off the heat you stir in some fresh basil, some lemon zest and some lemon juice. A drizzle of olive oil goes on as you serve.

(1,023 posts)Mrs. Ts onion pierogi with andouille and sautéed onion. Nice German mustard and beets. Kinda full, so probably a piece of magical chocolate before I go to bed.😉

(68,469 posts)told me to get a Dash waffle iron. She has one and really likes it. and it made really good crispy waffles. Mine was worn out. I was lazy and used gluten-free Bisquick. I have to say it made the best waffles. I followed the recipe except I separated the egg and whipped the white egg until it had soft peaks...My mom always said that was what helped make waffles crisp She also said to use oil instead of butter. They were crisp and delicious. I added a little cheese to the eggs too.

(16,330 posts)We took a break from Blue Apron but started back with a few boxes recently. Its been easier than foraging the grocery store in search of a carrot or head of cauliflower.

(17,421 posts)A boneless chuck roast in the crock pot with veggies (carrots, onions, celery, and white potatoes).
The "broth" from the chicken breasts cooked yesterday was used for the liquid.
FLFC gave the meat four paws up and had two servings!

Changed things a bit, as I am wont to do: I used 4 c of milk and 2 c of penne, and I didn't add the spinach till the very end. Great success, everyone enjoyed it.
