What's for Dinner, Tues., Febr. 15, 2022

Eggplant and red pepper soup.

It's actually two soups. After you make both, you swirl the red pepper soup into the eggplant soup (or the other way around), kind of like a latte' pattern. So one is red and one is white.

The eggplant has onion, carrot, and chicken stock with coriander seeds.

The red pepper has red chiles in addition to the red bells, along with a little tomato puree and some tomatoes. Garlic, chicken stock, and basil.

Both soups were pureed.

I actually planned this for yesterday's Valentine celebration but I didn't get it done in time. My plan was to have the red pepper soup be the background and the eggplant be swirled in like a heart.

To go with this, some shrimp salad on crackers.

Hot decafe tea.
I used this recipe as the base of the green beans & I tweaked it, so the sauce was sweet and spicy.

Slow baked with tomato based BBQ sauce
Choice of baked sweet potato or white potato
Garden salad

FLFC headed to the kitchen and was eating his leftover sliced sirloin steak with gusto. I slipped meat from a rib on his plate. It's all gone. I think he was too full to want any more.

I forgot to mention that FLFC's favorite scritcher, our neighbor, will get a share of the ribs and whatever else he wants when he gets home from work. We regularly offer him dinner when we have an abundance. He's always up for a ham or turkey dinner or that casserole that was too big. He is not a cooking man.

baked in foil packets. Topped with a spinach purée and lemon butter.

Tossed green salad with balsamic dressing. Hard rolls.

My hubby caught the fish last fall and I froze it with my Food Saver.

Anyone notice cauliflower is about $3.25 a head? But a pound frozen is 99 cents? Wonder if that's because it's frozen inventory, or because trucking in the fresh is so expensive right now.

Dessert is TBA. There's just nothing around. An orange, lemons. Probably bake a cookie.

An Italian restaurant about 20 miles into the Catskills in New York makes fresh pasta. Since today was our day off, we went for a drive up to Roscoe, NY to buy some fettuccini. Imagine our disappointment after the 45-minute drive when we disco verde the place was only open Thursdays through Sundays during the cold season!

So we're settling for the boxed stuff. Actually, I don't care as much as my wife!

I'm making an Alfredo sauce and adding peas, minced onions and chopped Prosciutto da Parma. We'll have a Caesar salad with the pasta. There are two Klondike bars left from my son's visit so we'll have those for dessert.

leftover meatloaf with mushrooms and golden mushroom gravy, garlic buttered steamed yellow potatoes, asparagus.

I ate a bite of meatloaf. Now having a cup of coffee with cocoa, whole milk and stevia.

so cooked more pasta, then realized I did not really need to so now I have a boatload of angel hair spaghetti

Maybe I will make a chicken tetrazzini tomorrow.
