Made this yesterday--Mollie Katzen's Savory Vegetable Cheesecake. It took so much time that I only had a small bite yesterday, so will enjoy it for tonight's dinner:
You can see the zoodles (zucchini noodles) in a swirly pattern on the top. They are mixed with cilantro and sprinkled with parmesan. Underneath are two layers of chopped vegetables mixed with ricotta and mozzarella.
Between the layers are more zoodles.
Because I baked it in a springform pan at a fairly high temp, it has a nice golden brown edge to it.
The recipe said to put breadcrumbs on top, so I used panko and butter to make them. The pics don't show the breadcrumbs, though.
For dessert, the last of the peanut butter cookies (2) and decaf hazelnut.
Once again, our supermarket in the Catskills has a fantastic selection of seafood. Today, we bought a salmon filet that is enough for two meals. It's a beautiful healthy orange color and we froze half and marinated the other half in milk. It's a beautiful fake-Spring day and I think I'll grill the filet. I'm going to make a lemon/dill sauce to serve with the fish.
I'm also planning a salad of baby spinach, slivers of strawberries, slivers of almonds with a raspberry vinaigrette dressing. Lastly, the Landlady(!) wants mashed potatoes so I'll do something with them like garlic or chives. Maybe both!
Dark chocolates and red wine for dessert.

And steaming some B size yukon golds, then flattening them and frying them in olive oil with crushed rosemary and garlic.

I have a lot of cous cous left over from the other night, so we'll have that. Also some steamed broccoli.
