Spicy Pasta Salad with Pepperoncini

Kinda' difficult to post here 'cuz I have a cat crawling all over me but this is a Rick Rodgers recipe. Rick is the author of The Big Book of Sides, a cookbook about side dishes. He lives in the next town south of me. It suggests fusillii for the pasta and has soppressata, sliced, stuffed olives, and Genoa salami. Celery. The dressing is made with pepperoncini brine, red wine, herbs.

That's probably going to be it for me for the evening, however, there is cold BBQ chicken in the frig if it's not.

Dessert: vanilla rice pudding with fruit (blackberries, strawberries) on top. Hot Earl Grey decaf.

My side dish game needs a boost...so THANKS for the tip!!

We're having Italian sausage orzo with spinach. Sauteed broccolini with lemon zest on the side.

I'm not familiar with this Mr. Rodgers and will check him out.

In honor of National Margarita Day, we're going Mexican tonight. One of our neighbors is coming for dinner and here's the menu.

Cocktail
Margaritas, of course. I bought a bottle of the mix and some golden tequila.

Appetizer
Fresh homemade guacamole with spicy salsa and crunchy tortilla chips.

Entree
Surf 'N' Turf fajitas with shrimp, skirt steak, red and green bell peppers, onions, garlic all pan grilled. We have hard taco shells and soft flour tortillas. On the side will be lettuce, tomato, cheddar cheese and sour cream. Yellow rice and refried beans with jalapeños will accompany the meal.

Desert
Fresh berries and maybe another margarita!

I think dessert will be a baked sugar cookie just like last night. It was about 1/8 cornmeal and the sweetness and texture was very good.

Dad and Sis got stuffed shells (she supplied the frozen stuffed shells) with homemade meat sauce. The meat sauce was a tomato sauce that had ground Italian sausage, mushrooms, onions, peppers, They also had a side of steamed broccoli.

We're having cheese ravioli with nearly the same meat sauce. The meat in our sauce is ground beef. We're having a typical side salad with our dinner.

Ice cream bar for dessert.

per the recipe on the Times cooking site. I'm using up leftover duck: this is a sauce based on coconut milk and Thai curry paste, with duck pieces and orange juice and zest added. I have lots of leftover duck, and the orange tree is extremely productive this year, so...

It was OK: sort of like duck in a creamy orange sauce. Now I have to figure out what to do with half a can of coconut milk (and the rest of the duck)

nice restaurant. I had grilled salmon, sauteed Swiss chard, roasted cauliflower and chick pea puree.

Al had potato-crusted cod that sat in a bowl of sweet corn chowder.


We shared an apple crisp for dessert.
