What's for Dinner, Fri., Febr. 25, 2022

Asparagus roll-ups. Three steamed asparagus spears rolled up in thinly sliced ham and cheese. I made two types, some with provolone and the other with blue cheese. Melt the cheese at a low temp in the oven.

A favorite salad:

--tossed greens, red leaf and iceburg
--red onion
--spicy roasted garbanzos
--green pepper
--shredded cheddar
--sliced, stuffed olives
--sliced Creminis

Homemade Thousand Island salad dressing.

Slice of vegetable cheesecake, which has zucchini, onion, garlic, grated carrots, chopped red pepper, mozzarella, and ricotta cheese in it.

Dessert: Earl Grey decaf. A couple sugar-free chocolates.

Dessert will likely be Christmas cookies. Stauffers. They're not bad if you read the ingredients and avoid the high fructose ones.

Normally round steak is chewy, I used this recipe, it was okay.

I have not pan seared beef in the house for a very long time and the smoke from the cooking beef set the smoke detector in the hall way off. My 2 cats have not heard the smoke detector before, they headed right downstairs a fast clip.

The rest if the round steak will be used for stew

Same as last night, homemade reubens with homemade pasta salad.

Husband is eating later since we picked up General Tso's and egg rolls from the little (used to be) cheap Chinese place while out running errands and didn't eat til we got home around 1:30p. I'm not eating at all since Chinese food keeps me full the remainder of the day. I did save some of the General Tso's for tomorrow's breakfast, cold outta the fridge, tho.

Chocolate cheesecake later, for husband, not me.

back surgery and I need a real meal today...lots of white chicken and vegetable and homemade gravy. Fruit and pudding for dessert.

Late post, we ate much earlier

FLFC definitely had a four paws up. Mr. pickey eater was actually eating with gusto.

These were grass fed top sirloin steaks.They tasted different and I liked the difference.
French fries from the freezer.

Not a particularly healthy meal, but every one enjoyed it.
