What's for Dinner, Mon., April 18, 2022

Stuffed crescents. Half will have chopped kale, shallot, and Taleggio cheese, which I put in a de-stemmed mushroom. Then I take half the dough from a package of crescent rolls and put it in a cupcake silicone pan and bake them.

So it's the dough, then the mushroom, then the filling.

The other half will have goat cheese and red bell pepper in the mushroom, then encased in the crescent, per above.

Got this fantastic new kombucha today: it's cranberry peach.

Chopped watercress salad.

Dessert: green grapes & pomegranate seeds, over Greek yogurt with toasted almonds.

Sweet & spicy Good Earth tea.

Homemade black bean soup (love my InstaPot)
Grilled sharp cheddar cheese sandwich (I add a speck of yellow mustard inside)

topped with a blue cheese compound butter, on a bun with arugula and sliced pear. Tossed salad on the side and oven baked fries for my guys.
