Related: About this forumDoes anyone have a recipe for potato cakes? My mother used to make
it with leftover mashed potatoes, an egg (maybe) and then fry them like pancakes in a skillet. I need to know if I am missing some ingredients. I haven't eaten or cooked them in over 50 years.

(15,878 posts)instead of milk....OMG they were delish. She slow cooked the onions and garlic down till they were caramelized and sweet. Totally clog up your blood vessels but they were SO good...

(36,927 posts)I generally make some extra baked potatoes and refrigerate the leftovers. In the morning Ill peel them, grate them, grate some onion to throw in the mix and a whisked egg. A bit of salt and whatever seasonings you like are appropriate and fresh herbs work well.
Since the starch in the potatoes sets up overnight I dont need to add flour, so Id expect the same to be true for left over mashed potatoes.
I like to top them with crème fraiche.
Its really hard to mess them up. Just use your imagination.

Latkes made of grated potatoes are popular. They are prepared by grating potatoes and onions with a box grater or food processor; then excess moisture is squeezed out. The grated potatoes are then mixed with eggs and flour or matzo meal; a vegan version uses chickpea flour and potato starch instead of eggs. The latkes are fried in batches in an oiled pan. The thickness is a matter of personal preference.

My Mother also used to make potato cakes from leftover mashed potatoes. I have also made when I had left mashed potato, seems like I add finely minced onion, a few tablespoons flour and beaten egg beaten egg.
