What's for Dinner, Mon., May 23, 2022

Ravioli stuffed with butternut squash in garlic parmesan cream sauce. Sauteed bits of chorizo sprinkled in.

Tossed green salad with raw vegetables like red, green, and yellow peppers, red onion, sundried tomato.

Blueberry basil kombucha.

I pulled some Roma tomato seeds from Walmart tomatoes a couple weeks ago, and they've sprouted, like 2" high. Don't know how far I'll get, it's late to start tomatoes. They're in a gallon paint can and will need repotting.

I read about one with kale... not a fan, so opted for spinach.

It was yummy.

I'm solo in the mountain houses I've made a treat for myself.

Grilled filet mignon, medium rare.

Marinated asparagus spears, grilled.

A potato sliced into quarters lengthwise and marinated in olive oil and Italian spices. Grilled.

A very large Vidalia onion sliced thickly and grilled.

One stop cooking at the grill.

Dolce di Leche ice cream for dessert.

Aldi sells very reasonably priced sushi quality tuna, so I made a poke bowl by making poke and adding a bunch of stuff I had hanging around my refrigerator—rice, cucumber, pickled onions, etc.

Or sometimes salmon or other fish. Cubed, dressed with soy sauce and any number of other ingredients—sesame oil, rice vinegar, green onion, sliced chilies, etc. I like a fairly plain version with just soy sauce and sliced green onions.

I've made seviche with salmon. I haven't heard of poke, maybe I will experiment

Apparently popular in the islands. Aldi sells 12 ounces of flash frozen ahi tuna for only $5.39 and it’s very good quality.

I'm not hungry at the moment, and haven't eaten since breakfast this morning (2 small sausage biscuits) and wasn't hungry even then; just ate them bc of meds.

Due to no appetite and not much even sounding appealing anymore, even my usual long time favorites, I'm basically down to cooking for just 1 person these days.

The side effect of one of them is appetite suppression, but it feels like it's going beyond that. Seeing the doc this week and will discuss it with her.

I don't reply much anymore, either. Such good memories of back when this group was newish. It was a really hopping place to be, lots of great discussion, sometimes trying new recipes as a group and reporting results, etc. I wish I still had that kind of energy and had more to contribute again. Life has become too stressful and exhausting.

Sliced potatoes, whole baby carrots, chopped frozen broccoli, onion, garlic and spices (curry, turmeric, paprika, Badia Everything, salt and pepper) in the pan under the broiler rack.

I made a strawberry shake with fresh berries and home-brewed vanilla for lunch, so dessert before dinner.
