in birria, to see what your shooting for. Try the ones that use goat, too. Watch some of the Mexican YouTubers for variations and technique.

There's a taqueria I go to that has it.....I'd never had goat before I tried it and OMG it's great.

That in Munich the internet is my friend for Mexican ingredients.
the last time I returned from the states I came back with dried peppers from my previous local market.
Now I can get some on line for a bit more, but less than a plane ticket home.

Ordering.
Many times it is hard to determine where they are being shipped from and I have gotten unexpected duties and charges.
