What's for Dinner, Tues., June 7, 2022

The RG made meatloaf.

Corn, cut from the cob.

Tossed romaine salad with scallions, cucumber, and homemade blue cheese dressing.

Dessert: chocolate chip cookies I made from a mix but I added walnuts.

over cauliflower rice

I don't know if it's traditional to add veggies to a korma, but I added onions, yellow squash and broccoli. It's an attempt to make sure we get the veggies we need.

brownies for dessert


Dad had broccoli & cheese stuffed chicken breasts (from the freezer section), rice pilaf, steamed broccoli & carrots. I've been trying to keep the meals there simple, so I can get back home to Al in short order. Al's doing well, but I don't like to leave him alone for too long.

Reheated in it's own pot jus, with potato pancakes and green beans, maybe a little sour cream/horseradish on the side. If I'm still hungry I'll heat up a Cinnabon.
