I am looking forward to the day when I can have the dish you describe with vegetables I grew. I usually don't have the greatest luck with broccoli but the others, for sure.

(22,767 posts)Have been using this brand for years, haven't tried any of the others. When I was unable to get it for a few months toward the end of last year, I just waited for it to become available again.
I just steam the broccoli florets and the sugar snap peas in the microwave for a few minutes, quarter the zucchini and squash, throw all the veg together and saute in olive oil, with salt, pepper and garlic. Then throw the angel hair on top of the veg and mix in the tomato pesto. Pretty quick and easy dinner.
Hope all your veg come in for you this year and you'll have lots of options.
Edited to add: sometimes I brown boneless, skinless chicken breast or thighs and slice it up in this recipe, too.

(35,623 posts)the night before. When the RG makes too much pasta, he often makes it into a pie using the cast iron skillet.
In this case, he used roasted vegetables (red pepper, zucchini, leeks) in the pie. The carbonara already had egg and bacon in it. He added additional eggs and half 'n half (plus seasonings) and baked it in the cast iron pan. The noodles get all crispy because he coats the pan with olive oil.
It is really good and makes a leftover into an entirely different dish. Of course, his specialty is pasta (he's an importer), and he has devised dozens of creative ways to use pasta.
