What's for Dinner, Fri., June 17, 2022

Grilled vegetable sandwich on panini with mozzarella, caramelized onion and mushrooms, tomato, yellow squash, and red pepper. I'll be doing this later tonight, when the sun isn't so hot. It's 88 here in NJ, but I know that sounds cool to a lot of you who are putting up with 100 degree temps.

For dessert an ice cold chocolate slushie.

4. Ribeye steak and cottage fries

cut the steak in half, broiled it to medium rare, and made some fresh cottage fries on the stove, (potatoes thin sliced and frieded in a little olive oil.)

Tomorrow is the anniversary of my wedding 52 years ago. I won't be home tomorrow, so I had the commemorative dinner tonight. I like making it a special day, much better than moping. As for having it today, we rarely went out on the actual day, just went when we could

Braised in chicken stock with diced tomatoes, spinach, onions, and chiles. Topped with nacho jalapenos. Served over rice--regular for him, chickpea for me.
