What's for Dinner, Wed., June 22, 2022

I went to the Polish deli today and brought home chicken, pork, and fish cutlets. Also pierogis. Enough for numerous meals so I can finish planting at four gardens.

I'm making a mayo-based herb sauce to go with whatever I choose from the above.

Also bought a meatloaf.

Lupinis in tomato sauce and cherries in a jar.

Pastries, mostly poppy-seed filled rolls.

To go with it, I'll make roasted cauliflower/broccoli and summer squash for vegetables.

Strawberry kombucha to drink.

For dessert, some of the poppyseed roll and a cold decaf.

Home made. With peppers, and I think my favorite cheese blend which is 6 cheese mix plus Monterey Jack. I'd like some mozzarella and Asiago, but don't have any and Asiago is not available anyway. I won't buy the national brand that's sweet and creamy. Asiago should be nutty and medium hard.

2. spicy chicken and vegetables

I combined a partial package of Kroger brand Mexican style vegetables, some frozen onion and peppers, some frozen ocra, some frozen summer squash I blanched and packed last year, garlic, jalapeno slices, fresh onion and pepper, and some garlic scapes my daughter sent from her farm co-op bounty. I added my usual seasonings. After that was ready, I sauteed chunks of chicken breast, garlic, jalapeno pepper, fresh onion, more garlic scapes, and tossed in leftover Santa Fe blend vegetables from the other day. I had a flour burrito wrap with the meal.

For dessert, I had 2 squares of dark chocolate and a handful of unsalted roasted almonds.

Decafe cold tea.

No recipe, I just eyeballed amount the olive oil & spice on the long cut squash, zuke, peppers & onion.

Great stew and easy if you've never made it.
Dinner party for eight.
Great leftovers if for four.

7. Corned beef and cabbage

using up some corned beef that we bought in March. Along with the cabbage, there were potatoes, carrots and onions. I guess that makes it New England Boiled Dinner?

dessert is strawberries on some boughten cake cups and whipped cream.
