Had some chicken parts

They were in need of being cooked.
Two breast halves and two wings. Browned them with salt and pepper. Transferred to a plate. In the pan went half a
onion sliced thin, when wilted added some sliced mushrooms and cooked until starting to brown. Sprinkled in some paprika
stirred for about a minute and added a bit of balsamic vinegar. Then 1.5 cups chicken stock and a good glug of dry sherry.
Nestled in the chicken parts, tossed in a few small Roma tomatoes cut up, some basil and put a lid on it until done.
Thickened the sauce and served with boiled buttered potatoes and steamed zuchini.

I do that a lot, use what I've got and make something new with it.

Took some leftover pork in chili sauce I had in the freezer, cooked some thin spaghetti pasta and then sauteed it with some olive oil and queso fresco; put the pork & chili sauce over it, and garnished with cilantro. Actually, it was pretty tasty!
