Arugula with olive oil, salt & pepper.
Half a breaded chicken cutlet with mayo-based herb sauce.
Vegetable nests (Trader Joe frozen). Love these--easy to make and delicious.
Dessert: going to my friend's house tonight and she's serving dessert. Not sure what it is, but it's probably something like sliced cantalope and berries.

This arugula was actually wilted only a few hours ago:
I thought it was a goner. It had gone to flower, but the upper leaves looked good so I cut a big bowl of it separating the leaves and flowers. I put it in ice water (lots of ice!) and the leaves perked right up. I served some tonight and put the rest in a bag in the refrig.
Regarding the flowers, I found out you can eat the arugula flowers! Here are four ways to use them that I learned about from a blog post.
Sprinkled on top of salads
On top of summer gazpacho
Made into ice cubes for a refreshing drink (think Bloody Mary, etc.)
Over savory dishes
The white and purple flowers are very pretty, and I'm planning on having mine over an omelette sometime this weekend.

Al has had an upset tummy all day, so I figured I'd eat w/ Dad, and if Al feels like eating at some point, I'll fix him something.

(10,133 posts)will perk up a lot of greens. I never use ice cubes, just slightly acidulated water. It even works for that bundle of asparagus that was lurking in the back of the fridge (I trimmed the stem ends, then set them in a jar of water). Back in the 19th century fancy dinner services included celery vases so you could impress your guests with fresh celery!
