I made a dish called "Bang Bang Cauliflower." Cauliflower florets dipped in egg and breaded with panko. Baked at high heat. A dipping sauce goes with it, which is hot and sweet (mayo based). I found the recipe at The Spruce.
More of my tossed green salad, probably with lemon-poppyseed vinaigrette.
Sandwich on Brioche roll--Genoa salami, provolone, sliced red onion, tomato, lettuce, and Dijon mustard. Black and green olives and pepperoncini.
Strawberry fruit bar for dessert.

Dad had chicken cordon bleu (a frozen thing that just needs to bake in the oven), rotini w/ pesto, asparagus and yellow squash.

(5,631 posts)Its rustic. Will make a red wine marinara in the instapot and add some homemade meatballs from the freezer. Let that pressure cook into a meat sauce. Using Al dente rigatoni in a casserole dish I will toss the pasta in the red sauce then pour on a homemade beschemel with 4 Italian cheeses.
I normally pressure cook beef in red wine and shred it but had the meatballs already so these should be a good sub for the meat. I expect them to break down in the pressure cooker and make a badass meat sauce!
