This quick salad is a cinch to whip up, keeps for several days in the fridge and is a real crowd-pleaser.

I've made it with the clear vinegar/water/sugar/dill sauce and I've made it with a sour cream/dill or yogurt sauce. One thing I love to do with leftovers is make a cucumber sandwich - just some mayo or Miracle Whip and pile on the drained cucumber/onion mixture!

I love fresh dill, so looking forward to finding some to add to cuke salad.

is awesome. Thai cucumber salad is similar, but adds ground peanuts and cilantro.
Thanks for posting the recipe links; I have not made knish in ages and may add some to our 4th of July menu
