What's for Dinner, Mon., July 22, 2022

Avocado roll from the sushi shop. Of course pickled ginger and wasabi. Soy sauce.

Goat cheese sandwiches with arugula, roasted peppers, and onion jam on a baguette.

Dessert: iced, coffee and chocolate tart with hazelnut shortbread crust (from local bakery).

Cheese tortellini with sautéed yellow squash, broccoli, carrots and onions. Garlic bread and chianti.

Easy and colorful.

the last of the bag of baby artichokes I got at the farmers' market. They're a pain to prep: you strip off the tough leaves until you get to the edible core (hint: remove leaves until you think you've removed enough, then take off another layer) But it's something you can't get most places.
