What's for Dinner, Sun., July 17, 2022

Chilled Yellow Squash Soup with Dill
This recipe has chicken or vegetable broth, onion, lemon and dill. Calls for yogurt but I think I'll use mascarpone and sour cream.

Tuna fish salad on green pepper slices. The tuna salad is from WF and has black olives in it. As an accompaniment, I'll have a bowl of nuts and dried fruit.

Berry Nirvana kombucha.

Dessert: iced decaf and hazelnut chocolate sandwiches that came in the mail as a gift from the RG.

1. Grilled chicken

An appetizer of zucchini flower fritters with chopped yellow squash, garlic and parsley from the Landlady(!)'s garden.

Chicken legs and thighs have been marinating since this morning in olive oil, Balsamic vinegar, salt, pepper, chunks of garlic, oregano and fresh thyme. They'll be cooked on a hot grill to get them crispy and slightly charred.

A salad of sliced cucumbers, chopped red onion, tomato chunks and thin slices of fresh mozzarella with an Italian dressing along with grill-toasted Italian bread to round out the meal.

Dark chocolate and red wine for dessert while we watch "Lawrence of Arabia."

We had the stir fry Thursday and the Stroganoff last night.

Chocolate pound cake for dessert

I bought a new mixer so made the cake to test it out. It works just fine.

I really have to get some new chilled soup recipes. I have grown tired of gazpacho. When it is hot and humid in Pa., chilled soup is the best!

7. Chorizo tacos

The fresh chorizo is homemade, with 4 more meals' worth in the freezer. The coop has good fatty coarse ground pork and I got a lot. I had chili paste pre-made in the freezer for the chorizo, with one final jar left for something else.

Topped with cilantro, cheddar, onion and avocado.

It was my first try at corn tortillas. Good flavor, but I need to get them thinner.

No sides, but a Paloma to drink (tequila + grapefruit soda).

I made a separate batch of sage breakfast sausage. We had one for breakfast and 3 for the freezer. That's it for stocking up for a while. The only thing I need to get for the rest of this pay period is milk every once in a while.

with carrots and the leftover ham bone. Tomorrow's dinner: leftover bean soup with a couple more vegetables. Or maybe a ribolita - an Italian vegetable soup with stale bread.
